New World Millennium Hong Kong Hotel's Newly Renovated Lounge Offers Elegant Daytime Respite and Eye Opening Evening Wine Discoveries


NEW World Millennium Hong Kong Hotel’s The Lounge re-opens after a five-month renovation, revealing an inviting and versatile space for social gatherings, business conversations or quiet respite.

An innovative wine programme, with new cellar and revamped wine selection at exceptional value prices, create an oenophile’s dream destination in the evening hours.

During the day, The Lounge is bathed in natural light from two-story, floor-to-ceiling windows. The design of the contemporary chandeliers gives a sense of flower petals about to float gently down to the camellia-patterned carpet.

The atmosphere is tranquil and elegant for guests to savour delicacies and unwind in the cosy setting.

At nighttime, The Lounge turns into a chic magnet for wine enthusiasts of all stripes. A giant glass wine cabinet takes centre stage at the "Vin et Vin" area, containing a spiral staircase that descends into a modern, well-equipped cellar storing more than 1,000 labels of old and new world wines.

A sage green feature wall with patterned wood strips, bringing to mind miles of vineyards, and wood panels sensuously engraved with swirls, extend right down into the cellar too, creating a continuity of spaces that invites guests to explore the cellar’s treasures.

Hotel’s Assistant Director of Food and Beverage, also the Chief Sommelier, Sam Chong and a team of hotel wine gurus have meticulously sourced classic vintages, rare pours and hidden gem boutique finds from around the world.

Every evening from 5 to 11 p.m. (midnight on Friday and Saturday), a handpicked selection by the glass is on offer, as well as a themed, two-hour free-flow wine tour of eight special labels for just HKD278 +10% per person.

Upcoming, guided wine tasting nights will feature a variety of intriguing themes and vintages.

To complement the wine experience, Executive Chef Gary Wong has created an array of artful bites of Western classic delicacies infused with Chinese ingredients.

Some of the small plate highlights include a bold Beef Tartare with Sichuan Pepper, brightly flavoured Chilled Crystal Century Egg and Pickled Ginger, Barbecued Chicken Liver and Pork Spring Rolls, Chinese Sausage Croquettes, and many other diverse and innovative creations with a twist, specially curated to enhance wine connoisseurship.

Barbecued Chicken Liver and Pork Spring Rolls
This dish is a twist of an iconic Cantonese creation. Barbecued chicken liver and pork are chopped and wrapped in rice paper and deep-fried to crunchy perfection. The rich flavour pairs well with wine.

Beef Tartare with Sichuan Pepper, Spring Onion and Sago Crisps
Classic beef tartare is enlivened with Chinese ingredients – Sichuan pepper and spring onion. The pepper delivers a spicy kick, while the spring onion adds crunch and flavour.

Chilled Crystal Century Egg and Pickled Ginger
Executive Chef Wong’s creative, refined transformation of this traditional Chinese appetiser involves a beautifully cut century egg and shredded baby ginger placed inside a jelly of pickled ginger juice. The refreshing sweet and sour bites, with a hint of spiciness, are perfect for stimulating guests’ appetite.

Deep-fried Lobster Claws stuffed with Shrimp and Squid Mousse
This deep-fried delicacy, often found at Chinese celebratory banquets, has been reimagined with squid ink used to create a black shrimp mousse, with bouncy squid mixed in for extra texture. The dish is finished with preserved plum powder to enhance the lobster claws’ savoury flavour.

Whole Tiger Prawn-stuffed Chicken Wings with Preserved Red Bean Curd Paste
De-boned chicken wings are stuffed with whole tiger prawns, rolled in bacon and pan-fried to golden. This succulent, meaty indulgence is served with a homemade red bean curd sauce for a unique salty accent.
